Ovation Brut Cuvée Adelaide Hills

Crafted from Pinot Noir, Chardonnay and Meunier grapes sourced from some of the Adelaide Hills' best sparkling wine vineyards, this sparkling wine is made in the traditional method with a blend of vintages to build complexity. The wine spends an average of 35 months on yeast lees. Ovation Brut Cuvee bears a pale-gold colour with aromas of French pastries, fresh strawberries, and preserved lemon. The palate is elegantly balanced displaying red currant, nougat and lemon curd. The delicate bead and gentle creamy texture are offset by a refreshing acidity and complex finish with lingering flavours of lemon meringue.

2023 TJ Chardonnay Yarra Valley

The 2023 Tillie J Chardonnay has been awarded an impressive 95 points by the James Halliday Wine Companion.
This Chardonnay is a masterclass in balance and finesse, crafted from the finest grapes of the Rising vineyard near St Andrews. From the first pour, the wine’s bright green-gold colour hints at the vibrant experience that awaits. On the nose, you’re greeted with delicate aromas of pear skin and pink grapefruit, mingling with subtle marine notes that add a touch of intrigue. Each sip reveals layers of flavour—think juicy stone fruits and citrus, all underpinned by a fine thread of oak that’s been perfectly integrated through natural fermentation in French barriques (20% new). The mid-palate delivers impressive intensity, leading to a finish that’s both balanced and long, with just the right amount of grip.

2023 Amberley Chenin Blanc Western Australia

A pure Chenin Blanc wine, from fruit grown exclusively to premiere vineyards within the elite coterie of superior Margaret River vineyards. Grapes are picked at varying degrees of ripeness to form a complex yet harmonious palate which shows elegant fruit characteristics, whilst exhibiting the flavour intensity of riper, late picked berries. Full of freshness and vitality, the lifted nose makes an ideal aperitif, its engaging palate and textural finish merits accompaniement to delicate white meats and fleshy fishes.
Bright, light straw hues. Clean, fresh aromas of green apple and pear, underlying hints of honeysuckle and toasty notes add complexity. Off dry palate with a crisp acidity that refreshes the middle and back palate, intensity of fruit offering juicy characters of Fuji apples, apple blossoms and lime, concluding with attractive honey notes right at the finish.

* 2012 The Pagan Shiraz McLaren Vale

The Pagan Shiraz is the flagship wine for Koltz and also represents our philosophy of making handmade wines which are complex and a pleasure to drink. The Pagan is made from shiraz grapes grown on our Blewitt Springs vineyard, in the coolest, most elevated parts of McLaren Vale. The grapes are hand-picked into drying trays and taken to the winery where they are dried for 6 to 7 weeks. They are then sorted and crushed into small open fermenters where they slowly ferment and are hand plunged for 3 weeks before being basket pressed. The new wine continues to ferment for many months in oak and in total spends two years in oak before being bottled.
