2015 Seppelt Salinger Vintage Cuvée

Named after the vignerons who supplied grapes to the Seppelt Winery for over 70 years, Salinger embodies the long Seppelt tradition of premium sparkling wine production. Produced by the Méthode Traditionnelle, the fruit from this Pinot Noir Chardonnay was sourced from Henty, a cool-climate region in South West Victoria pioneered for grape growing by the Seppelt family in 1964.

Cool upper Yarra Sauv blanc with a small portion of Semillon from the Rising Vineyard. Part barrel fermented in old oak puncheons for texture and complexity. Aromatic notes of passionfruit, gooseberry and nettle are enhanced by hints of mineral flint. Elegant in style with texture and characteristic tight juicy acidity.

Chateau Fayau Cadillac Sautern

Brilliant pale straw colour with greenish tinged pale gold edges and a watery hue. Intense honeyed peach scents rise from the glass with marmalade, ripe apricot and spice also present. Rich, luscious palate flavours of honeyed peaches and apricots fill the mouth over some light marmalade, citrus and spice. Excellent length although not quite the weight or concentration of top flight Sauternes. Good fresh finish with a long-honeyed peach, apricot, marmalade and spice aftertaste.
